The Best Zucchini Noodle Carbonara

Ingredients


  • four large zucchini
  • 1 egg
  • 1/four cup grated Parmesan cheese
  • 1/2 teaspoon sea salt
  • 2 egg yolks
  • 4 slices (nitrate-loose) deli ham or Canadian bacon, diced (Boar's Head became used in this recipe)
  • half teaspoon clean ground black pepper

Instructions


  1. Using either a spiral slicer or julienne peeler, cut zucchini into noodles. Lay noodles on a paper towel and sprinkle calmly with the salt. Let take a seat for five minutes. Squeeze out as a good deal liquid as you could.
  2. Whisk egg yolks with egg and cheese till well combined. Heat a skillet over medium heat and prepare dinner bacon until crisp. Add zucchini noodles and stir till warmed via. Reduce warmness to low and stir in egg aggregate. Turn off warmness and stir noodles until eggs are just cooked.
  3. Season with black pepper earlier than serving. 
  4. Enjoy!
