Grilled Salmon Kebobs ( Low Carb )

Ingredients


  • Salmon
  • 2 tablespoons fresh squeezed lemon juice
  • 3 tablespoons minced fresh rosemary
  • 1 pound thick wild salmon, with out pores and skin, cut into approximately 12 cubes
  • Marinade
  • 2 tablespoons more virgin olive oil
  • half of teaspoon kosher or sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon dijon mustard
  • 2 cloves garlic, minced
  • four skewers, if the use of bamboo or wooden soak in heat water for 20 to 30 minutes

Instructions


  1. Whisk together all substances for marinade.
  2. Add salmon and allow marinate for about 20 minutes at room temperature.
  3. Thread portions of salmon on skewers.
  4. Coat grates of a grill or a grill pan or skillet with a light layer of cooking spray.
  5. Set to high.
  6. Once hot, upload skewers to grill or pan and cook dinner for three mins or so on each side for 6 to eight minutes, till the fish is opaque and flakes easily with a fork, basting with any leftover marinade whilst cooking.
  7. Enjoy!
